Research Associate: Co-designing novel packaging for promoting ready-to-eat seafood products to senior citizens in Europe

This post is co-financed by the European Development Fund through the INTERREG Atlantic Area Programme and is a collaboration between Lancaster University, and several organizations across Atlantic Area Europe.

The EU has set various priority actions to reduce the burden of malnutrition and unacceptable levels of food insecurity for specific vulnerable populations, such as older people. 

SEAFOOD-AGE aims at tackling the challenge by creating solutions towards healthier ageing and a circular economy seafood sector. To reach its goals, the project will: 

  • design sustainable, healthier, safer, high-quality ready-to-eat (RTE) seafood products to meet the 65+ adults’ needs and reduce food loss;

  • produce eco-innovative packages exploiting natural resources and by-products to meet 65+ adults’ requirements; 

  • design smart predictive labels to aid retailers to reduce food waste while optimising quality and safety, and to support ageing consumers to make better-informed RTE seafood choices;

  • develop capacity for innovation and accelerate the pace of embedding the circular economy values into the seafood sector.

You will be expected to support the design-led research, data analysis/synthesis and dissemination related to: a) establish senior citizen and consumer barriers in selecting, purchasing and consuming seafood products and b) the co-design of novel packaging that increases seafood customer acceptance. You will be expected to employ participatory design research methods, design ethnography and prototyping, working in close cooperation with other European researchers across the project consortium. You will be based in the UK at Lancaster University but will be required to travel for a few days once or twice a year to attend meetings with European partners.

This is a 1 FTE fixed term appointment for 30 months in line with external funding.
